Mustard Garlic Chicken

SERVES: 4

Ingredients:

  • 2 tablespoons salted butter

  • 5 garlic cloves, finely chopped

  • 2 cups leftover roast chicken, shredded

  • 1 cup fresh parsley leaves, roughly chopped

  • 1 heaped teaspoon Dijon mustard

  • 1 heaped teaspoon seeded mustard

Directions:

  1. Heat the butter in a medium sized frypan until just melted. Add the garlic and saute for a minute until lovely and fragrant.

  2. Add the chicken and cook for a couple of minutes until heated through. Add the parsley and mustards and stir for a further 3 minutes until well combined.

  3. Serve piping hot with white rice and/ or a green salad for a complete meal.
