Grilled Stone Fruit with Ice Cream & Toasted Walnuts

SERVES: 4

Ingredients:

  • 10-12 stone fruit (peaches, nectarines, apricots)

  • ¼ cup honey

  • ½ teaspoon vanilla bean paste

  • ¼ teaspoon sea salt flakes

  • ¼ teaspoon ground cinnamon

  • Quality vanilla ice cream, to serve

  • Toasted walnuts, to serve

Directions:

  1. Preheat the oven to 200C.

  2. Halve and pit the stone fruit and place them on a medium size baking tray. Add the balance of the ingredients and lightly toss about until the fruit is well covered by the other ingredients.

  3. Make sure the fruit is sitting with their cut side up in the tray and then pop them into the oven to roast for 22-25 minutes or until they are slightly browned around the edges. Allow to cool a little.

  4. To assemble, place a few warm fruits on the plate. Place a large dollop of ice cream on top of the fruit and then sprinkle over some toasted walnuts. Drizzle with the syrup that is left on the bottom of the roasting tray and serve immediately.
