Fruit Salad Ice Pops
MAKES: 8 • TOTAL TIME: 6 HOURS 30 MINUTES
Ingredients:
Popsicle moulds
Ice cream sticks
3 cups of fruit of your choices
2 cups apple juice
Directions:
Slice larger fruit such as peaches and kiwis into ½ cm slices. Slice strawberries into thirds.
Place fruit into popsicle moulds, lining sides and bottom with the sliced fruit and filling gaps with smaller fruits like blueberries or raspberries. Add as much fruit as you can fit into the mould, continuing to press it against the sides as this will ensure that you will see the fruit when the juice freezes.
Fill the moulds with apple juice, leaving a ½ cm gap at the top for the juice to expand when it freezes.
Insert an ice cream stick into the middle of each popsicle between the layers of fruit.
Place popsicles in the freezer ideally overnight but for a minimum of 6 hours before eating.
