Broccoli & Rice Salad
SERVES: 4 • TOTAL TIME: 30 MINUTES
Ingredients:
4 cups broccoli florets
⅔ cup red rice
⅔ cup white rice
400g tin chickpeas, drained and rinsed
2 spring onions, finely chopped
¼ cup sliced almonds, toasted
¼ cup coriander leaves, chopped
Directions:
Cook rice according to packet directions and set aside to cool.
Steam broccoli until tender, then add to a large bowl along with the remaining salad ingredients, including cooled rice.
Whisk all the dressing ingredients together in a small bowl. Pour the dressing over the salad and toss well to coat. Taste and season if desired.
