Avocado Goddess Dressing

SERVES: 2 • TOTAL TIME: 5 MINUTES

Ingredients:

  • 1 avocado

  • ½ cup coriander leaves

  • ¼ cup parsley leaves

  • ¼ cup freshly squeezed lime juice

  • ½ cup water, plus extra if needed

  • ¼ cup olive oil

  • ¼ cup Greek yoghurt

  • 1 clove garlic, crushed

  • ¼ tsp sea salt

  • ¼ tsp black pepper

Directions:

  1. Halve avocado and remove the seed.

  2. Scoop avocado flesh into a blender.

  3. Add all remaining ingredients and pulse until smooth. If you want a thinner consistency, add extra water.


Note:

  • To make this recipe vegan, replace the Greek yoghurt with a dairy-free coconut yoghurt or with ¼ cup walnuts or raw cashews.
