Avocado Goddess Dressing
SERVES: 2 • TOTAL TIME: 5 MINUTES
Ingredients:
1 avocado
½ cup coriander leaves
¼ cup parsley leaves
¼ cup freshly squeezed lime juice
½ cup water, plus extra if needed
¼ cup olive oil
¼ cup Greek yoghurt
1 clove garlic, crushed
¼ tsp sea salt
¼ tsp black pepper
Directions:
Halve avocado and remove the seed.
Scoop avocado flesh into a blender.
Add all remaining ingredients and pulse until smooth. If you want a thinner consistency, add extra water.
Note:
To make this recipe vegan, replace the Greek yoghurt with a dairy-free coconut yoghurt or with ¼ cup walnuts or raw cashews.
