Apple Tart Tartin
SERVES: 6 • TOTAL TIME: 30 MINUTES
Ingredients:
4 medium apples, peeled, cored and sliced into eighths
1 sheet frozen buttery puff pastry, partially thawed
½ cup brown sugar
2 tbsp cold water
50g unsalted butter
Cream or ice–cream to serve
Directions:
Preheat oven to 220˚C. Grease and line a 20–centimetre round cake tin.
Melt butter in a large frying pan over medium heat. Add apple slices and cook for 3–4 minutes or until a nice golden colour all over.
Add sugar to the pan with 2 tablespoons of cold water and cook, stirring for 2–3 minutes or until the sugar has fully dissolved. Bring to the boil and then drop the heat back to low. Simmer for 2–3 more minutes or until slightly thickened.
Cut a round out from the pastry about 2 centimetres larger than the cake tin. Place the apple mixture into the cake tin, distributing evenly. Then lay the pastry over the apple, tucking it in at the edges.
Place in hot oven and bake for 12–15 minutes or until it is golden and puffed. Allow to stand in the cake tin for 5 minutes before inverting it onto a serving plate. Serve with thickened cream or ice-cream or both!
