Cheesy Chicken Toastie
On this episode of Simply Cooking with Supabarn, ease yourself into the late afternoon and use up your leftovers with this absolutely tasty and downright simple cheesy chicken toastie!

2 cups leftover roast chicken, shredded
1 ½ cups loosely packed parmesan, finely grated
2 cups loosely packed mozzarella, grated
2 cloves garlic, crushed
3 tablespoons salted butter, room temperature
8 slices of bread
1. To make the garlic butter, combine the butter and garlic in a bowl. Set aside.
2. Place the parmesan in a large dinner plate. Spread the garlic butter onto all the bread slices and place them buttered side down in the parmesan, making sure to pat down the bread so that the cheese sticks to the butter. Turn 4 of the bread slices over, divide the leftover chicken between the 4, top with the grated mozzarella and then top with the remaining 4 bread slices, cheese covered side up.
3. Heat a large non-stick frypan over a medium heat. Place two of the sandwiches in the pan and cook each side for 4-5 minutes or until golden brown and the cheese has melted. Transfer to a warm oven until you have cooked all four toasties and serve hot.
